Our Menu

We’ve forged innovative partnerships with local farmers and producers to ensure we are getting the freshest and best ingredients and are able to provide a unique culinary experience. Our beverage program focuses on wines and cocktails that offer plenty of opportunities for discovery, including some great inventive N/A options.

Reservations

Please note that cancellations, especially those with fewer than 24-hours notice, negatively impact our business.

We understand that plans change and kindly ask that you try to notify us as far in advance as possible if you need to reschedule your reservation. That allows us maximum time to offer the reservation to those on our growing wait list. Please call us for parties larger than six.

Meet the Team

  • Grant Wann is Chef de Cuisine at Herbst Eatery & Farm Stand.

Born and raised in St. Paul, Minnesota, Grant Wann began his culinary journey early as he spent much of his youth in his mother’s restaurant, where the kitchen became both a classroom and a second home. By age 14, he was already working behind the scenes washing dishes, eventually learning every position from front door to back door. That early exposure built a deep respect for hospitality, teamwork, and the work ethic required to run a successful restaurant.

Though not classically trained in fine dining, Wann has pursued growth through hands-on experience. His career at Herbst began in 2024, when he was hired as a prep cook and then was quickly promoted to Sous Chef under the mentorship of Ben Moenster, former Executive Chef of Herbst Eatery & Farm Stand. In his two years at Herbst, Wann has played an integral role in menu development and helped guide the kitchen through multiple transitions, earning trust through consistency and an unwavering commitment to excellence.

In his role as Chef de Cuisine at Herbst, Wann, 29, leads the culinary team with a passion-driven approach rooted in hard work, adaptability, and genuine care for both the food and the people behind it. He’s committed to supporting small family farmers and has a passion for highlighting the high quality ingredients they provide in the dishes he and the culinary team create. Known as a quick study and a strong leader, he brings a balance of discipline and hospitality to the kitchen and is driven by faith in the craft and a relentless desire to keep learning.

  • Thomas Smith is the General Manager at Herbst Eatery & Farm Stand.

Thomas has deep hospitality and retail industry experience, along with a background in journalism, acting and comedy. His restaurant leadership experience spans more than a decade and three states.  Most recently, he was AGM at the 925 Restaurant in the Hotel Landing in Wayzata, where he started as an hourly supervisor and was promoted to Guest Experience Manager and ultimately, AGM. His restaurant experience prior to the 925 Restaurant included a six-year stint as General Manager at FEZ, a very successful, 220-seat restaurant in Phoenix, where he managed a staff of 40.

While Thomas brings great management experience to Herbst, he also brings a wonderful sense of humor and a passion for entertaining and making people happy.  In fact, Thomas spent some time as an actor in LA, and later studied stand-up comedy at the American Comedy Institute, before spending many years performing in NY, LA and Phoenix.  His love of food and comedy also led him to maintain a popular blog called the Culinary Comedian.  Thomas studied Urban Studies and Planning at the University of Minnesota and lives in Linden Hills.
